Salad with tangerines

You will need:

  • persimmon - 1 pc.;
  • tangerine - 1 pc.;
  • 1 hot salted pepper;
  • chicken meat (beef) baked or boiled—200 g;
  • lightly salted cucumbers (https://www.prelest.com/nyam/zagotovki/ogurcy-malosolnye)—2 pcs. small size;
  • fresh tomato - 0.5 pcs. or 2 cherry tomatoes;
  • onion - half;
  • vegetable oil - 1 table. spoon;
  • salt pepper.

For the sauce

  • 1 baked eggplant;
  • red hot pepper;
  • pickled garlic - 2 cloves;
  • cilantro - 1 bunch;
  • lightly salted cucumber - 1 pc.;
  • salt pepper;
  • mayonnaise - 3 tsp. with a slide;
  • liquid honey - 0.5 tsp;
  • vegetable oil - 1 table. l.

Preparation

We will lay out the salad in layers. You can chop the ingredients in any order, taking into account that tangerines, persimmons and tomatoes cannot be chopped too much, otherwise they will release juice.

  1. Slice the persimmon. Place on a plate.
  2. Place chopped cucumbers on top.
  3. Next is the tomato.
  4. A layer of pepper.
  5. Then lay out the meat.
  6. Sprinkle with salt and pepper.
  7. Cut the onion into 4 parts and cut each slice into slices. Fry in oil over high heat, stirring constantly until golden brown (about a minute). There is no need to fry it, it should remain half raw. Cool the finished onion and place it on top of the meat.
  8. Spoon the sauce in several places.
  9. We cut the tangerines into rings, and then cut each ring into halves. Decorate the salad with citrus.
  10. If desired, you can sprinkle the dish with chopped cilantro, parsley, dill and basil leaves on top.

How to prepare the sauce

  1. Place eggplant, several rings of pepper, garlic, cilantro, salt, ground pepper, chopped cucumber, mayonnaise, and honey in a blender bowl.
  2. Beat with a blender.
  3. Add oil.
  4. Beat again.

Tip Instead of sauce, you can use mayonnaise or vegetable oil.

Olivier with red fish

A tasty and familiar dish takes on a new meaning when combined with red fish and powdered sugar. For this recipe, you will need a portable torch. Well, or you can try something else to sear the top of the lettuce.

You will need:

  • boiled carrots - 1 pc.;
  • boiled potatoes - 2 pcs.;
  • boiled egg - 1 pc.;
  • pickled cucumber - 1 pc.;

  • salted salmon - 200–300 g;
  • powdered sugar - 1 tsp;

  • veal meat - 200g;
  • canned tuna in its own juice - 70 g;
  • homemade mayonnaise - 20 g;
  • milk - 20 ml;
  • cherry tomatoes - 30 g;
  • capers - 5 g;

  • salt, pepper, herbs - to taste.

Preparation

  1. The meat needs to be peppered, salted and rubbed with oil.

You will need:

  • tartlets - 15 pcs.;
  • avocado - 1 pc.;
  • garlic - 2 cloves;
  • lemon juice - 2 tsp;
  • soy sauce - 3 tsp;
  • peeled, boiled shrimp - 15 pcs.

Preparation

  1. Cut the avocado in half and remove the pit. Use a spoon to scoop out the pulp.
  2. Place garlic, avocado pulp, lemon juice, and soy sauce in a blender bowl. We chop everything. If desired, you can add chopped dill to the cream.
  3. Place the finished mixture on tartlets and decorate the appetizer with shrimp and herbs on top.

Options for compositional solutions

The festive table may not have a clear compositional center. Most often this is suitable for oblong narrow tables. In this case, it is necessary to adhere to the principle of equality, so that all seats near each person sitting are decorated uniformly. We advise you to mentally “draw” an axis through the middle of the table and place identical decorations along it (pine branches, candles, garland, etc.). In this case, it is not recommended to take out common dishes (there will simply be nowhere to put them).

For round tables, a single-center composition is used (the main element is in the middle and all other parts are placed around it). For wide rectangular and square tables, 2-3 centers are allowed, duplicating each other.

The main thing on the table can be something bright and original that attracts attention. But this composition should not be huge so as not to interfere with visual contact and conversation between seated guests. The recommended height of the central element is no more than 30 centimeters .

What can serve as the center of the table at a holiday dedicated to the Earth Pig? This animal, who loves traditions, will appreciate the design, where the main thing is the main hot dish - baked meat, chicken, turkey. But this option is suitable if all the food is not taken out gradually, but is served immediately at the very beginning of the celebration.

If it is expected that the dishes will be brought to the table gradually, then in the center you can install compositions from wooden vases filled with cones of different sizes and small spruce branches. You can complement them with a pair of bright Christmas balls and place a candle in the center.

Several very tall glasses filled with water with floating candles will look original. You can diversify the idea if you fill the glasses up to about a third with Christmas tree decorations (in the colors that Earth Pig loves - brown, red, gold, yellow).

A very simple option for the center of the table is a dish with pine cones poured inside, around which there are fir branches intertwined with a garland.

  • vegetable oil - 2 tablespoons. l.;
  • salt, pepper mixture - a pinch;
  • dry white (good) wine - 50 ml.

For filling

  • cottage cheese - 1 table. l.;
  • basmati rice - 50 g;
  • butter - 0.5 table. l.;
  • vegetable oil - 0.5 tsp;
  • young garlic - 2-3 cloves;
  • tarragon and parsley - 2-3 sprigs each.

Preparation

  1. Boil the rice in 100 ml of water in advance.
  2. Preheat the oven to 180 degrees.
  3. Chop the greens.
  4. Peel the garlic and heat it in a mixture of oils taken for the filling. The garlic should become soft and transparent, not golden. After flavoring, remove the vegetable from the oil.
  5. Add herbs, rice and cottage cheese to the aromatic oil mixture. Mix well.
  6. Beat the chicken breasts, salt and pepper.
  7. Cut the ham into thin slices the size of a chicken breast. We put it on each chopped piece of meat, and on top - minced curd and rice.
  8. We roll the rolls, fasten them with toothpicks or tie them with thread.
  9. Fry in vegetable oil over high heat until golden brown.
  10. Place the rolls on a greased baking sheet, pour wine and the remaining juice in the pan over them.
  11. Place in the oven for 20–30 minutes.

Tip Before beating, the meat can be placed between two pieces of cling film. Then it will maintain its integrity, and small pieces will not fly apart during beating. If you place the ham under the chicken breast before stuffing, then the rolls will get a crispy crust while frying.

If you want to create a simpler menu, you can stuff the chicken meat differently: put a thin piece of ham or sausage (boiled, smoked) as a filling, and a piece of cheese on top. Form rolls, roll them in breadcrumbs, then in beaten eggs, and again in breadcrumbs. Fry for 10 minutes over medium heat on each side. This dish is known as cordon bleu.

Beef in dough

Tender, juicy beef with mushroom and vegetable dressing will look truly festive in a puff pastry shell.

You will need:

  • puff pastry - 0.5 kg;
  • beef tenderloin in one piece - 1 kg;
  • champignons - 350 g;
  • egg - 1 pc. for minced meat and 1 pc. for lubrication;
  • onion - 1 pc.;
  • dry white wine - 50 ml;
  • vegetable oil - 60 ml;
  • bread crumbs - 25 g;
  • mustard - 20 g;
  • salt, pepper, parsley - to taste.

Preparation

  1. Pour half the required amount of oil into the frying pan and heat it up.
  2. Finely chop the onion and sauté.
  3. Mix the frying with peeled and finely chopped mushrooms. Fry for about a quarter of an hour.
  4. Add the egg and mix everything well.
  5. Pour the wine here and wait for it to evaporate.
  6. After this, pour crackers and chopped parsley into the mushroom dressing, mix and remove from heat.
  7. We wash the meat, dry it with paper towels, and rub it with salt and pepper.
  8. Fry in a second portion of oil until golden brown.
  9. Let it cool a little.
  10. As soon as the tenderloin is warm, brush it with mustard.
  11. Roll out the dough to a thickness of 3–5 mm.
  12. Place half of the fried mushrooms and onions across the middle of the resulting layer.
  13. Place the beef on top and cover it with the remaining mushroom and onion mixture.
  14. Cover with dough and seal the ends.
  15. Brush the top with egg and place in an oven preheated to 190 degrees for 1 hour.

Meat recipes for the New Year 2020 can be varied with a rabbit dish. Tender dietary meat acquires special notes in a duet with lemon-honey dressing, shaded with the aroma of spices and herbs.

Rabbit with rosemary

You will need:

  • rabbit carcass - 1 pc.;
  • garlic, lemon - 1 pc.;
  • cherry tomatoes (can be frozen) - 150 g;
  • vegetable oil - 80 ml;
  • fresh rosemary - 3 sprigs;
  • honey - 1 table. l.;
  • salt, pepper to taste.

Preparation

  1. Wash the rabbit, chop it into pieces, put it in a deep bowl.
  2. Prepare the marinade: rosemary, crushed garlic cloves, honey, salt, pepper, lemon pieces, mix well.
  3. Rub the mixture over the meat and leave for 15 minutes.
  4. Preheat the oven to 160 degrees.
  5. Place the rabbit on a greased baking sheet and sprinkle with quartered tomatoes.
  6. Bake for 1.5 hours.

Advice. In order for the rabbit to remain juicy and a golden brown crust to form on it, the meat needs to be poured with the juice that is released from time to time. You can also bake the dish in an earthenware dish with a lid.

Stylish and cozy accessories

Details add completeness to any composition; do not underestimate them. Naturally, they should emphasize the overall style (in our case, homey and bright). You can use beads, Christmas tree decorations, branches of coniferous trees, garlands, tinsel, as well as yellow and orange fruits, winter berries (cranberries, rowan).

The Earth Pig should be appeased with an abundance of decorations made from its favorite delicacies - nuts, chestnuts, acorns, dry oak leaves. They can be used as follows:

  • Pour into transparent long candlesticks. The candle should be in harmony with the brown color of the fruit (it is better to choose white or beige options).
  • Place decorative lanterns with candles on the table. Similar candle lanterns are available in different sizes at Ikea.
  • Make miniature wreaths - you can place dishes, jugs of drinks, and glasses in the center of the resulting ring.

If someone doesn’t feel like doing needlework at all, then chestnuts, acorns, and nuts should be scattered chaotically on the table. In between, we recommend putting cute felt figurines (for example, depicting the main symbol of 2020) - after the celebration, they can be given to guests as a nice gift.

Bright accents on the table will be “balls” of oranges. The red fruit is decorated with cloves and cardamom stars and placed on dishes surrounded by pine branches.

Candles and garlands

Apple candles will be an excellent decoration for the New Year's table. To create them you will need:

  • 8–10 pcs. apples;
  • round knife;

When thinking about how to decorate a festive table for the New Year, you cannot lose sight of the tablecloth, which can be snow-white, blue, golden, silver or red. It’s good if it has embroidery, New Year’s drawings, ribbons or rhinestones. You can also look for a tablecloth with an unusual pattern that blends harmoniously with the table decoration. For example, a tablecloth with deer will go well with forest motifs in dishes and trinkets on the table.

You can lay several tablecloths on the table at once: at the bottom there is a white one, and at the top in the center of the table there is a strip of red tablecloth folded several times.

It is advisable to start from the shape of the table. If the table has a rectangular shape, then a linen table runner will look stylish on it. If the table is round, then it is better to choose a tablecloth with a pattern or embroidery along the edges.

You should not completely abandon the tablecloth, because even the most ordinary white fabric will immediately give the table solemnity, and the appropriate decorations will add a festive, cheerful look to it.

Dishes

Festive table decoration for the New Year 2020 should also include dishes. It is advisable to place on the table a beautiful set or plates with characteristic New Year's themed designs. It will be very appropriate to have dishes with a clock depicted - looking at them, guests will eagerly wait for the chimes to begin.

If your plans did not include buying dishes that can be used only once a year, you can do it differently - put sprigs of rosemary, sweet New Year's sticks or Christmas tree balls folded into a heart on the plates, and it will already be festive.

When deciding how to decorate the New Year's table with your own hands, you can start right from the plates placed on it:

  • Cut out the required number of Christmas trees from paper and place them in the center of each plate.
  • You can also put paper scrolls on which New Year’s wishes are written on the same plates, or place a tiny spruce branch fixed in a piece of wood.

  • Cutlery wrapped in beautiful fabric napkins looks no less attractive.
